In a #large mixing bowl{}, whisk together @buttermilk or plain whole-milk yogurt{1%cup} (227g), @quick-cooking or instant oats{1/2%cup} (45g), @egg{1%large}, @neutral oil{3%tbsp} (40g), @ground cinnamon{1/2%tsp}, and @vanilla extract or paste{1/2%tsp}.

-- Note: Thick yogurts like Greek or Skyr won't work here because the batter will become too thick. Use quick-cooking or instant oats only; old-fashioned rolled oats will make the waffles gummy.

Let the wet oat mixture sit so the oats plump and soften in the acidic yogurt or buttermilk, about ~rest{15%minutes}.

Meanwhile, in a #medium mixing bowl{}, thoroughly whisk together @whole wheat flour{3/4%cup} (90g), @hemp seeds{1/4%cup} (30g), @light or dark brown sugar{3%tbsp} (40g), @baking powder{2%tsp}, and @kosher salt{1/2%tsp}.

Preheat a #waffle iron{}.

Pour the dry flour mixture into the wet bowl and whisk just until combined and no dry flour streaks remain.

Cook batter in the preheated waffle iron according to the manufacturer's instructions until deeply golden-brown and crisp, about ~cook{3-5%minutes} per waffle.

-- Tip for maximum crispness: Leave each waffle in the iron for about 1 extra minute after the iron signals that it's done. Wait 1 minute before adding the next round of batter to ensure the iron recovers full heat.
-- Feeding a crowd: Build a warming zone by setting wire racks into sheet trays in a 250°F (120°C) oven. Rest waffles on the racks as you cook (overlapping slightly, fitting up to 5 waffles per tray) so they stay warm and crisp.

Serve hot with @pure maple syrup{}, or top with @labne{} and spiced @apple butter{}.

-- Make-ahead & Freezing: You can whisk the wet and dry ingredients separately the night before (keep wet mixture refrigerated), then combine and cook in the morning. Cooked waffles freeze wonderfully—stack cooled waffles separated by parchment or wax paper in a freezer bag, and toast directly from frozen.
