Preheat oven to 315°F (157°C) and grease an #8x8-inch square baking dish{} with cooking spray.

In a #medium mixing bowl{}, mix softened @unsalted butter{1%cup} (2 sticks / 1/2 lb), @confectioner's sugar{1.33%cups}, and @light brown sugar{3%tbsp} vigorously with a wooden spoon or spatula until smooth and uniform.

Stir in @large egg yolks{3}.

Add @all-purpose flour{1.75%cups} and @kosher salt{1/2%tsp}. Mix just until dough comes together. ("The less you mix the dough, the more positive vibes your biscuits will have," according to Tosi).

Using damp hands, press dough firmly into an even layer across the bottom of prepared baking dish.

Bake at 315°F for ~bake{40%to 45%minutes} until a thin, golden brown layer forms on top.

Let cool completely in pan before cutting into two even columns and six rows to make 12 "Lasso-size" slices. Arrange in pink bakery boxes!
