In a #large skillet{}, melt @butter{4%tbsp} over medium heat. Add chopped @yellow onions{2%medium} and chopped @celery stalks{3}. Sweat until soft and translucent, ~sweat{8%minutes}. Remove and set aside.

In the same skillet, sauté sliced @button mushrooms{8%oz} in a little butter until browned and moisture evaporates, ~sauté{5%minutes}. Set aside.

In the skillet, cook crumbled @Jones pork sausage roll{1%lb} over medium-high heat until well-browned and cooked through, ~brown{8%minutes}. Set sausage aside and reserve rendered sausage drippings.

Drain @canned mandarin oranges{1%can} and gently break the segments into bite-sized pieces.

In a #very large mixing bowl{}, tear @Pepperidge Farm white bread{1%loaf} into bite-sized pieces.

Add the cooked sausage, sweated onions and celery, sautéed mushrooms, mandarin orange segments, reserved sausage grease, and melted butter to the torn bread.

Lightly beat @large eggs{2} in a small bowl and pour over mixture. Season generously with @Bell's seasoning or poultry seasoning{1%tbsp}, @kosher salt, and @black pepper.

Mix gently with clean hands or a large spoon until everything is evenly distributed. (If mixture feels slightly dry, splash in a little @rich turkey or chicken broth{1/2%cup} until moist but not soggy).

* **In a Casserole Dish:** Transfer stuffing into a greased #9x13-inch baking dish{}. Cover with foil and bake at 350°F (175°C) for ~bake{30%minutes}, then uncover and bake for ~crisp{15%minutes} until top is golden and crisp.
* **Under a Spatchcocked or Whole Turkey:** Place the prepared stuffing in the roasting pan directly beneath the turkey rack to catch all flavorful turkey drippings while roasting.
